Fact about me I love broccoli. A few months ago I started experimenting with that great vegetable and I made some awesome and yummy meals. Broccoli is known to be a hearty and tasty vegetable which is rich in dozens of nutrients. Here are some of the benefits of broccoli it helps you: cancer prevention, cholesterol reduction, a powerful antioxidant, bone health, great for detoxification, skin care, eye care, anti-aging (full of vitamin C)

Here are some of my favorite recipes that I tried:

1.BROCCOLI FRITTERS
Ingredients
3 cups chopped steamed broccoli
3/4 cups flour
2 eggs
1/2 teaspoon of salt and paper
2 tablespoons olive oil/coconut oil/sunflower oil
you can add 1/2 of onion

Instructions
Start by cutting your broccoli and cook it. After your broccoli is cooked add transfer it in a large bowl and stir in flour, paper, and salt. Make sure your broccoli is cold down before you add eggs. Check the eggs inside. Mix it and squeeze it together like you making a dough. Heat the olive oil in a frying pan on medium heat. Once hot, use a ladle to spoon the batter into the pan to form small patties... Allow the fritters to cook for 3 minutes until lightly golden and then flip and cook for 2-3 more minutes on the other side. Once cooked transfer to a paper towel and keep warm in the oven while you cook the remainder of the fritters.
2.CHICKEN IN BROCCOLI SAUCE
Ingredients
200 grams of broccoli
160 grams of chicken breast
25 grams of butter/oil/coconut oil
salt, paper and any kind you like
15 ml of cooking cream/greek yogurt

Instructions
Start by cutting chicken breast in small peace and fried it on your oil. Cook your broccoli and then mash it. Then in a deep bowl all broccoli, butter and cooking cream. Stew your broccoli and add salt and paper (other species...) In your sauce add chicken and mix.
3.BROCCOLI MUFFINS
Ingredients
10-12 broccoli trees, steam trimmed to fit inside the muffin
1/3 cup of melted butter
1 cup of milk
1/3 cup of water
1 tablespoon of vegetable spices
2 eggs
2 cups of flour
2 teaspoons of baking powder
salt, paper
-1/3 cup of cheese-you can add it if you prefer

Instructions
Preheat oven to 350F. Spray a 12 muffin tin or line with muffin cups. In a large mixing bowl combine flour and baking powder, add eggs, salt and cheese if you want and add your vegetable spices. Add your milk and (cold) melted butter, stir in to combine. With a spoon add your mixture in your cups. Fill about a half. Add one tree broccoli to each muffin cup, and add more mixture to cover it up. Bake at 350F for 25-30 minutes, or until golden brown and inserted toothpick comes out clean.
